JATIMTIMES - Mie kuning menjadi salah satu bahan makanan yang paling sering ditemukan di pasar tradisional. Namun, hasil pengujian laboratorium yang dibagikan kreator konten sains Andrea Novita baru-baru ini meminta agar masyarakat waspada.

Dalam video yang diunggah di media sosial, Andrea menunjukkan proses pengujian formalin pada sampel mie kuning yang dibelinya langsung dari pasar. Hasilnya, sampel tersebut dinyatakan positif mengandung formalin berdasarkan rapid test yang dilakukan di laboratorium.

Video itu pun ramai diperbincangkan karena formalin merupakan bahan kimia yang dilarang digunakan sebagai pengawet makanan di Indonesia.

Dalam videonya, Andrea menjelaskan bahwa ia membeli mie kuning dari pasar lalu membawanya ke laboratorium untuk dilakukan pengujian kandungan formalin.

"Gimana kalau gue ketemu formalin di mie kuning? Iya guys, ini pengawet yang biasanya buat jenazah," ujar Andrea dalam videonya.

Ia kemudian memperlihatkan tahapan pengujian yang dilakukan. Sampel mie diambil sekitar 10 gram, dicampur air, lalu dihancurkan sebelum cairannya dimasukkan ke tabung reaksi untuk diuji menggunakan reagen khusus.

"Oke, jadi ceritanya kemarin tuh gue ke pasarkan dan beli mie kuning. Terus penasaran, pengen gue bawa ke lab buat kita uji formalin," katanya.

Menurut Andrea, indikator positif formalin ditandai dengan perubahan warna larutan menjadi merah muda atau pink pekat setelah ditetesi reagen.

"Dan sesuai acuan, kalau positif formalin nanti dia tuh bakal berubah jadi warna pink pekat gitu," jelasnya.

Setelah beberapa menit menunggu, warna larutan mulai berubah. "Dan liat guys, yang tadinya kuning dia berubah warna jadi pink kemerahan," ujarnya.

Andrea juga membandingkan hasil sampel tersebut dengan larutan formalin murni yang digunakan sebagai pembanding. "Yang gue bandingin sama yang kanan itu larutan formalin beneran ya, yang terbukti positif," tambahnya. 

Berdasarkan hasil uji cepat yang dilakukan, Andrea menyebut sampel mie kuning yang dibelinya menunjukkan hasil positif formalin. "Nah, dari hasil rapid test ini, sayangnya mie kuning yang gue beli di pasar positif formalin guys," katanya.

Ia kemudian mengingatkan bahwa formalin tidak boleh digunakan sebagai bahan tambahan pangan.

“Dan masalahnya, formalin ini bener-bener dilarang keras ya, dipake buat awetin makanan.” Andrea menjelaskan bahwa penggunaan formalin secara legal hanya diperuntukkan bagi kebutuhan industri tertentu.

"Dan legalnya tuh dipake buat industri tekstil atau awetin spesimen biologis. Jadi harus hati-hati ya guys," imbuhnya.

Meski demikian, hasil pengujian tersebut hanya berlaku pada sampel yang diuji dan tidak dapat digeneralisasi untuk seluruh mie kuning yang dijual di pasar.

Untuk diketahui, Formalin atau formaldehida sebenarnya merupakan bahan kimia yang lazim digunakan dalam berbagai sektor industri. Zat ini dimanfaatkan untuk industri tekstil, pertanian, pengawetan spesimen laboratorium, hingga bahan baku sejumlah produk kimia.

Namun karena mampu memperlambat proses pembusukan, formalin kerap disalahgunakan sebagai pengawet pangan ilegal.

Produk yang paling sering ditemukan mengandung formalin antara lain mie basah atau mie kuning, tahu, ikan asin, seafood, hingga sejumlah produk pangan segar lainnya.

Padahal pemerintah telah melarang penggunaan formalin sebagai Bahan Tambahan Pangan (BTP) melalui Peraturan Menteri Kesehatan Republik Indonesia Nomor 033 Tahun 2012.

Para ahli kesehatan mengingatkan bahwa formalin termasuk zat karsinogenik yang dapat meningkatkan risiko kanker apabila terpapar dalam jangka panjang.

Paparan formalin dapat terjadi melalui makanan, udara yang terhirup, maupun kontak langsung dengan kulit.

Dalam jangka pendek, formalin dapat memicu berbagai gangguan kesehatan seperti:
• Iritasi mata
• Iritasi hidung dan tenggorokan
• Batuk
• Mimisan
• Sesak napas
• Reaksi alergi pada kulit

Sementara paparan berkepanjangan dikaitkan dengan peningkatan risiko sejumlah penyakit serius, termasuk:
• Kanker paru-paru
• Kanker tenggorokan
• Kanker nasofaring
• Leukemia
Anak-anak, lansia, serta penderita penyakit pernapasan kronis seperti asma dan bronkitis menjadi kelompok yang lebih rentan mengalami dampak kesehatan akibat formalin.

Sejumlah penelitian menunjukkan kadar formalin pada bahan pangan dapat berkurang melalui beberapa metode tertentu. Misalnya, perendaman tahu menggunakan jus lidah buaya dilaporkan mampu menurunkan kadar formalin hingga 58,64 persen.

Sementara perasan jeruk nipis 6 persen disebut efektif membantu mengurangi kandungan formalin pada udang rebon. Metode pencucian dan perendaman menggunakan air mengalir selama sekitar satu jam juga dilaporkan dapat menurunkan kadar formalin pada ikan asin.

Namun para peneliti menegaskan cara-cara tersebut tidak dapat menghilangkan formalin secara total. Karena itu, langkah terbaik tetap dengan menghindari konsumsi makanan yang dicurigai mengandung formalin dan membeli produk pangan dari sumber yang terpercaya.

Meski tidak selalu mudah dikenali, ada beberapa ciri yang sering ditemukan pada makanan yang diduga mengandung formalin.

Pada mie kuning atau mie basah, teksturnya biasanya lebih kenyal dari normal, tidak mudah basi meski disimpan dalam waktu lama, dan terkadang memiliki aroma kimia yang menyengat.

Sementara pada tahu, produk yang mengandung formalin cenderung lebih keras dan tidak mudah hancur.

Masyarakat juga disarankan mencuci bahan makanan hingga bersih sebelum diolah serta memasaknya sampai matang untuk membantu mengurangi risiko paparan bahan kimia berbahaya.
