JATIMTIMES - Perdebatan soal cara terbaik mengolah telur omega-3 kembali ramai dibahas di media sosial. Topik ini mencuat setelah pelopor telur omega-3 Indonesia, Yoseph Setiabudi, membagikan pandangannya saat menjadi bintang tamu di DAAI TV Indonesia.
Dalam tayangan tersebut, Yoseph menyarankan agar telur omega-3 tidak dimasak hingga terlalu matang, terutama jika digoreng. Menurutnya, kandungan omega-3 pada telur bisa berkurang ketika terkena suhu tinggi dalam waktu lama.

"Bapak ini termasuk tim telurnya digoreng atau direbus?" tanya pembawa acara, dilansir dari Instagram @daaitvindonesia, Sabtu (30/5/2026).
"Kalau untuk telur omega-3, saya tidak menganjurkan untuk digoreng," jawab Yoseph.
Ia menjelaskan, proses menggoreng yang membuat kuning telur mengeras dinilai dapat mengurangi manfaat omega-3 yang terkandung di dalamnya.
"Karena kalau digoreng, kalau kuning telurnya sampai sudah beku, itu omega-3-nya gone. Nggak ada omega lagi," katanya.
Mendengar penjelasan tersebut, pembawa acara kembali bertanya. "Oh, jadi kalau kita goreng, dia sampai keras itu, itu udah percuma," ujarnya.
"Ya," jawab Yoseph.
Pembawa acara kemudian menyinggung cara memasak telur dengan dikocok menjadi telur dadar. "Atau kalau dikocok, kuning telur sama putih dikocok, didadar, itu nggak ada gunanya," katanya.
"Oh, itu dia. Kenapa ada yang bilang kalau kuning sama putih nggak ada kandungannya," lanjutnya.
Yoseph kemudian menegaskan bahwa rekomendasinya lebih ditujukan untuk menjaga kandungan omega-3 tetap optimal.
"Kalau untuk omega 3, saya anjurin," ujarnya.
"Saya anjurin untuk direbus." tambah Yoseph.
Namun, ia tidak sepenuhnya melarang telur digoreng. Menurutnya, telur masih bisa digoreng asalkan tingkat kematangannya tidak berlebihan. "Atau kalau mau digoreng mata sapi. Tapi kuningnya belum keras, masih Sunny side up," ungkapnya.
Pernyataan Yoseph tersebut kemudian mendapat tanggapan dari dokter umum sekaligus Certified Health Coach, dr. Dion Haryadi.
Melalui konten edukasinya, dr Dion mengatakan bahwa kandungan omega-3 memang sensitif terhadap suhu tinggi. Namun, ia menilai anggapan bahwa omega-3 hilang sepenuhnya setelah digoreng tidak sepenuhnya tepat.
"Izin, meluruskan ya. Sebenarnya apa yang disampaikan itu ada benarnya, tapi nggak sepenuhnya tepat," kata dr Dion, dikutip dari Instagram pribadinya, Sabtu (30/5/2026).
Ia menjelaskan bahwa proses pemanasan memang dapat menurunkan kadar omega-3, tetapi jumlah yang berkurang relatif kecil berdasarkan sejumlah penelitian.
"Jadi kamu harus tahu bahwa omega-3 itu sensitif terhadap suhu. Jadi kalau dimasak dengan suhu yang lebih tinggi, omega-3-nya itu memang bisa berkurang," ungkapnya.
"Nah, tapi pengurangannya juga nggak yang terlalu banyak, setidaknya dari beberapa studi ini," lanjutnya.
Menurut dr Dion, salah satu penelitian menunjukkan kandungan omega-3 pada telur mentah sebesar 15,3 persen dan turun menjadi 14,6 persen setelah digoreng.
"Salah satunya yang ini, ketika dibandingin dalam kondisi mentah dan setelah digoreng orang Arik, ya turun dikit omega-3-nya dari 15,3% ke 14,6%," jelasnya.

Ia juga menyebut ada temuan menarik terkait metode perebusan. "Yang unik, kalau direbus 4 menit doang, justru naik jadi 16,9%. Dan kalau direbus sampai 15 menit, itu turun jadi 13,7%," katanya.
Karena itu, ia menilai memang ada penurunan kandungan omega-3 akibat proses memasak, tetapi tidak sampai menghilangkan seluruh manfaatnya.
"Jadi memang betul ada penurunan, tapi penurunannya setidaknya dari studi-studi ini ya, itu nggak terlalu banyak," tegasnya.
Selain soal omega-3, dr Dion juga menyoroti bagian percakapan yang berpotensi menimbulkan salah paham di masyarakat, terutama terkait anggapan bahwa telur dadar tidak memiliki kandungan gizi.
"Nah, yang bikin agak rancu sebenarnya dari video pendek ini, menurut saya adalah respon dari moderator yang bilang seperti ini," ujarnya.
Ia kemudian mengutip bagian percakapan tersebut. "Oh itu dia, kenapa ada yang bilang kalau kuning sama putih didadar itu enggak ada (kandungannya)." ucap moderator dalam acara DAAI TV Indonesia tersebut.
Menurut dr Dion, pernyataan itu bisa dikaitkan dengan hoaks lama yang sempat beredar mengenai telur dadar yang disebut-sebut tidak sehat atau kehilangan kandungan gizinya setelah dimasak.
"Nah ini tuh sepertinya mengaitkan dengan hoaks telur nggak boleh didadar tahun lalu kalau nggak salah. Yang juga sebenarnya nggak ada bukti ilmiah kuatnya dan bikin netizen jadi bingung gitu," katanya.
Ia menilai masyarakat tidak perlu khawatir mengonsumsi telur dadar karena hingga saat ini tidak ada bukti ilmiah kuat yang menunjukkan bahwa telur dadar menjadi tidak sehat hanya karena cara memasaknya.
"Oh ini nggak boleh makan telur dadar ya berarti yang nggak, nggak masalah sama sekali silahkan makan telur dadar," ujarnya.
Di akhir penjelasannya, dr Dion mengingatkan agar masyarakat tidak terlalu mempermasalahkan hal-hal kecil yang dampaknya relatif minim terhadap kesehatan secara keseluruhan.
"Hidup sehat itu udah susah jadi jangan tambah diributkan dengan hal-hal kecil yang sebenarnya nggak berpengaruh banyak seperti ini," katanya.
Menurutnya, telur tetap menjadi salah satu sumber protein yang baik, murah, mudah diolah, dan menyehatkan.
"Telur itu salah satu sumber protein yang enak, murah, fleksibel, mau diapain aja enak dan juga menyehatkan," ungkapnya.
Karena itu, ia meminta masyarakat tidak menjadi takut mengonsumsi telur hanya karena perbedaan metode memasak.
"Jangan gegara tonton video ini orang malah jadi takut untuk makan telur harus diginiin lah harus telur inilah," ujarnya.
"Ini mau telur biasa telur omega 3 mau direbus orang arik silahkan semuanya boleh. Oke semoga bermanfaat," pungkas dr. Dion.
